Protein Flapjacks

I’ve been talking about doing a flapjack recipe for a while now and this is what I came up with! Super easy to make and they’ve lasted me over a week in an airtight container- result!!!

What you need:
2 cups oats
1 cup almond ground
1 cup mixed seeds
1/2 cup goji berries
1 cup pumpkin seeds
1/2 cup of coconut oil
1/4 cup of honey
2 scoops of Whey Protein (I used Optimum Nutrition Lean Whey in Chocolate)
1 tsp. Salted Caramel flavouring
3 squares of Lindt 90% Dark Chocolate
1/2 cup water

What to do:
Soak in the goji berries in boiling water (this helps them not to burn in the oven)

Mix the rest of the dry ingredients in a bowl.

Add the goji berries to the dry mixture

In a saucepan melt the honey with the coconut oil and add it to the dry ingredients.

Mix very well until the mixture is a sticky consistency

Add the water here- will help the mixture to spread for you

Place mixture on to a lined baking tray Bake in the oven for 20 minutes at 180 degrees

Remove from the oven when they are a golden brown

Leave to cool down completely before cutting them up

These are so versatile and you can mix the recipe up to use your favourite nuts or seeds. This batch made 17 squares and they work out at 265 cals each. This is a little high but they’re full of healthy fats and protein!! Hope you like them as much as I did πŸ™‚

Salted Caramel Chocolate Protein Balls

So I’ve been wanted to make something like this for ages so I looked up some recipes and different ideas that might suit my taste buds and also the ingredients I had to hand! This is what I came up with and they are good πŸ™‚

What you need:

1 cup cashews

1/2 cup Shredded Coconut (plus 1tbsp. For rolling)

1 tbsp. Sweet Freedom Fruit Syrup

1 scoop Protein (I used Lean Whey in Chocolate flavour)

2 tbsp. Nuts and More Salted Caramel

15 Pitted Dates (chopped)

Pinch Sea Salt

1 tbsp. Cacao (for rolling)

What to do:

Place the cashews, coconut, nut butter, salt, protein, dates and fruit syrup into a food processor or nutri bullet and blitz until the mixture comes together

I had to blitz a couple of times as I used my Nutribullet

When the mixture is together, place in a small bowl

Sprinkle the cacao and the extra coconut onto a tray or chopping board

Take about 1tbsp. of mixture and roll into a ball

Roll the ball into the cacao/coconut

Continue this until all the mixture is used. Mine made 14 balls

Place them into the fridge for about 2 hours

And hey presto- done and they are delicious!!!

The batch should keep me going unless my folks decide to help me eat them πŸ™‚

Quinoa Crepe!

I made this for dinner but it’s definitely more of a dessert- Β but hey a meal can be a meal sometimes πŸ™‚

What you need:

1 Large Egg

1 tbsp. Nuts n More Salted Caramel

2 tbsp. Almond Milk

2 tbsp. Raw Quinoa

2 tbsp. Raw Oats

1 tsp. Vanilla Essence

2 tbsp. Fage Total 0% yogurt

25g 85% Dark Chocolate

2 tsp. Fruit Syrup

What to do:

Blitz the egg, quinoa, oats, almond milk, and vanilla essence in a nutribullet until smooth (use a blender of any kind)

Place on a pan on a low heat initially, and higher to about half way (no. 3 on Β my hob :))

Brown on one side and flip over and brown on the other side

Remove from the pan and place on your serving plate

Spread the Nuts n More Salted Caramel evenly and roll up on the plate

Spoon the yogurt onto the plate

Melt the chocolate for 1/2 minutes in the microwave, checking every few seconds

Pour over the crepe and yogurt

Finish off with a squeeze of Fruit Syrup ( I bought mine in Holland and Barrett)

This took me about 15 minutes max!! Super quick and completely hit that sweet craving!!

Chilli and Garlic Baked Potato Wedges!

Try this super super easy recipe for homemade wedges- ideal for a post workout feed!!

I have had them the past two nights and I love them!!!

What you need:

2 Small Rooster Potatoes (You can use any kind here)

Chilli powder

Garlic powder

1 tbsp. Olive Oil

What to do:

Preheat the oven to 200 degrees

Wash the potatoes removing any dirt from the skin

Chop into large wedges and place on an oven tray

Sprinkle the Chilli and Garlic on top

Drizzle with Olive oil

Bake at 170 degrees for approx 25 mins turning once

Remove from the oven once to your desired crispness πŸ™‚

I served mine with eggs and also with salmon you could literally put these as a side to anything!!!!

Frank’s Boneless Chicken Bites!

Sunday night and I just didn’t want to make a meal.. Mam had chicken piece left out ao I thought hey I’ll give something a go. and this is what happened! They were nice but very very HOT! πŸ™‚ You’ve been warned!!

What you need:

2/3 cup Coconut flour

1 small tin of Coconut milk

1 tray of Diced Chicken / Chicken Chunks

1 1/2 cups of Franks Hot Sauce

What to do:

Pour the coconut milk and the coconut flour into two separate bowls

Open your chicken and remove any unnecessary fat

Place some of the chicken in the bowl of coconut milk and ensure all of it gets coated

Then place the chicken into the bowl of the coconut flour and coat them

Place the pieces onto the pan and fry lightly

Remove from the pan and line on a grill tray and grill for approx 20mins, turning once

Remove from grill and toss on the pan to add some more colour

While on the pan, add the hot sauce and mix well so that all pieces are covered

Serve on its own or with your very own cool dip πŸ™‚ You could also add the chicken to salad or on a wrap for a more filling feed πŸ™‚

Seedy Crackers- NOM!!

Probably the best snack I have had during my entire clean eating lifestyle- so versatile and if you’re like me and not a fan of handfuls of nuts- these work wonders!!

 

What you need:

1 cup sunflower seeds

1 cup chia seeds

1 cup pumpkin seeds

1 cup brown linseeds

1 cup water

What to do:

Preheat oven to 200 degrees. Pour all of the seeds into a mixing bowl.

Holland and Barrett- great selection of seeds and nuts!Β Swelling!

Add the water to the seeds- leave to sit for approx. 10mins until the chia seeds have swelled

Line a baking tray with baking paper and pour the mixture in

Spread the seeds very thinly into the tray, covering the whole surface area

Bake in the oven for approx. 40mins- depending on how crunchy you would like them

Fresh out the oven!

Ready to eat!

Β You could have with aΒ  whole load of different toppings or dips too- Avocado/Hummus/ Cottage Cheese

Easy Peasy Protein Muffins!!

For a snack that will keep the sugar cravings away- this is exactly it!!

I recently came across this recipe from my trainer and I thought if he can throw it together then I definitely can make an attempt πŸ˜€ πŸ˜€

What you need:

2 scoops whey protein (I used NX Mint Chocolate)

3 heaped tbsp. Meridien Peanut Butter

1 tbsp. Cacao Powder

2 eggs

1 tbsp. honey

1 tbsp. Cocoa Flaxseed mix

4 squares 85% Dark Chocolate (in small pieces)

 

What to do:

Preheat the oven to 200 degrees

Mix all of the ingredients together in a mixing bowl

When smooth, Β transfer all mixture to individual cake cases

I had one of these warm and it was really good, To be fair I wasn’t sure whether they would be good seen as where I found the recipe πŸ˜€ They were really simple to make and I know for a fact they will not last long in my refrigerator πŸ™‚ You can supplement the protein to your own favourite flavour too.

Them Brownies :)

Quite possibly the quickest little dessert I have ever thrown together. This recipe made two servings. All in one bowl and baked in the oven! Delicious πŸ™‚

What you need:Β 

3 tbsp. Almond Meal

1 tsp. Coconut Flour

2 tsp. Cacao powder

1 egg white

1 tbsp. Almond milk (unsweetened)

1 medium banana

1 tsp. Coconut Oil

2 squares 85% Dark Chocolate (broken into small pieces)

 

What to do:

Preheat the oven to 200 degrees

Mash the banana until smooth into a bowl and add the egg white, coconut oil and almond milk. Mix well

Add the remaining ingredients- flour, cacao powder, almond meal and chocolate pieces and mix until smooth

Grease a couple of ramekins or else a muffin mould and transfer the mixture into two moulds

Bake on 180 degrees for approx. 25 minutes

 

Serve warm for the best results with a little drizzle of honey – these are soo yummmm!!!!!!!!!! Ideal with creme fraiche, or even some Wheyhey Vanilla.

Easy Peasy Pesto!

I came across this recipe from the guys at NutribulletUK and I just had to try it out. I absolutely love pesto- it is amazing!!!! So when I thought I could have it and it wasn’t full of crap; I just had to make up a batch!!

 

What you need:

1 cup of spinach/kale

1/2 cup of Cashew Nuts

1/2 cup of Parmesan

1/2 cup olive oil

2 cloves of garlic

Pinch of salt and pepper

 

What to do:

Blitz all of the ingredients in a blender/ Nutribullet

Add pinch salt and pepper to season

It is literally that simple and it is so so nice!! I had some with my dinner last night and will use it to season my chicken this week for lunch- Delicious πŸ™‚

Chunky Beetroot Dip.. Nom :D!

Had to share this great little side with you all- so simple and an easy way to jazz up the oul beetroots πŸ™‚ I would use it as a side to crispy sweet potato fries, on a salad or even as a stuffing for chicken!!

What you need:

2 whole beetroot

1 tbsp. ground cumin

1 garlic clove

Juice of 1 lemon

1/4 cup of sunflower seeds

What to do:

Preheat the oven to 180 degrees

Baked 2 beetroots on a med heat for approx. 20 minutes

When beginning to crisp, remove from the oven

Place the beetroot in a food processor and add the remaining ingredients

Blitz in the food processor until at your desired consistency- i like mine a little chunky πŸ™‚
