Slow Cooker Chicken Fajitas!

This recipe was literally thrown together- probably the easiest meal I have ever prepared! That’s what it’s all about… making it as easy as possible to enjoy good clean food ๐Ÿ™‚

What you need:

1 bag of precooked chicken pieces from Lidl (frozen). You can also use 3 x chicken fillets

1 fajita vegetable pack also from Lidl

2 tins of chopped tomatoes

1 green chilli

2 tbsp. driedย garlic

2 tbsp. paprika

2 tbsp. chilli powder

1/2 cup red kidney beans

1 chicken stock pot (melted in 1 cup of boiling water)

What to do:

Plug in your slow cooker and place on the high setting

Pour both tins of tomatoes in to line the bottom of the pot

Pour the veggies in on top and spread evenly

Layer the chicken on next, followed by the kidney beans and green chili

Sprinkle all of the spices on top and finally top with the chicken stock

Cover and leave on the high heat for 3-4 hours

I served with lettuce, cheese, jalapenos and half wholewheat wraps- Delish!!!!!!

Slow cooker Chicken and Vegetable Curry – Simples :D

Well well well another dish I wanted to do in the slow cooker- it literally is a life saver especially when your busy.

I seem to be constantly busy lately ๐Ÿ˜€ Really enjoyed this meal and it had minimal preparation too which always helps!! This served my other half and I. I had the portion pictured below and he had a gigantic amount so this would definitely spread to 3/4 portions if you do not have boyfriend/husband/housemate who will eat for Ireland.. literally ๐Ÿ˜€

Hope you all like it!!

What you need:

4 Chicken fillets

1/2 bag of Aldi Fajita chopped vegetables

3 tbsp. Tandoori curry powder

4 tbsp. Mild curry powder

4 mushrooms

1 small head of broccoli (6/8 florets)

1 red chilli

1 chicken stock cube

1 1/2 cups basmati rice

500ml water

What to do:

Dice the chicken fillets into chunky pieces; removing any visible fat. I left in a bowl in the fridge overnight ready to be thrown into the slow cooker

Taking another bowl, add half of the contents of the pre-chopped fajita vegetables

Dice the mushrooms, chilli and broccoli and add them to the vegetables in the bowl

Before work (the next day :D) I added both the chicken and vegetables to the slow cooker

Sprinkle the tandoori curry powder, mild curry powder and chicken stock cube over the chicken and vegetables

Cover the entire contents with the water ensuring all of the mixture is covered

Leave on low for approx. 8 hours

Before serving, boil the rice for approx. 15 minutes

The chicken is amazingly tender and the curry is not too hot either. I am sure you can amend to your own taste too with little variation to the recipe ๐Ÿ˜€

Clean Cuisine’s Slow Cooker Stew!

You will all be aware just how excited I was when purchased my new Slow Cooker this week!! So my forst recipe was always going to be an Irish favourite. After discussing with my trainer, stew isn’t all bad at all quite the opposite. So here goes my version of Beef Stew – perfect for cold winter evenings.

What you need:

1lb lean steak pieces

3 carrots

3 small sweet potatoes

4 mushrooms

2 onions

small handful of flat sweet peas

2 beef stock cubes

500ml water

1 x Knorr Oxtail soup mix

pinch of sage

pinch of thyme

 

What to do:

Peel and chop the carrots and sweet potatoes- add to the slow cooker

Peel and dice the onion and mushrooms and add to the slow cooker

Half the sweet peas and add to the pot also

Remove steak from packaging and add to the veggies in the slow cooker

Crumble the stock cubes over the ingredients in the slow cooker

Take the soup mix and pour into the slow cooker. I know there are questions sometimes about dry mixes but as you can see from the ingredients there is very little in it- especially considering it will be spread over a few different portions

Cover all of the ingredients with water

Add the sage and thyme and any other herbs you wish to add here

Leave to cook in the slow cooker for around 8 hours or until meat and veg is soft and tender

Serve over greens or on it’s own- DELICIOUS!!!

A super yummy winter dish and so easy to prepare too- great to leave on when you are heading to work and come back to a gorgeous comfort food dinner!! Who doesn’t enjoy a good oul Irish Stew ๐Ÿ˜€

This is definitely one to be remade!
