A different twist on eggs for breakkie.. got major inspo from the lovely Joe Wicks (The Body Coach) so here goes my version of Huevos Rancheros π
What you need:
2 eggs
1/2 large tin of chopped tomatoes or a small tin (whichever you have)
1/2 cup red kidney beans
1/2 chopped onion
Handful of chopped mixed peppers
1 tsp. dried chilli
1 tsp. dried garlic
1 tbsp. grated cheddar
What to do:
Fry the onions, peppers, tomatoes and kidney beans in a pan on a medium heat, until they begin to brown
Add the spices in and crack the eggs on top separately
Sprinkle the cheese on and place under the grill on a medium heat for approx 8/10 minutes
When cooked, remove from the grill and serve!
This was super super easy to make and a nice way to have eggs in the morning! You could have this meal any time of the day π
